Looking for a new way to enjoy your favorite Beemster? Blogger and Instagram star Peabody Johnson of Sweet ReciPEAS is known for her creative takes on dessert and other sweet treats, but when asked for a Beemster-inspired recipe, she went in a savory direction.
Combining two popular Beemsters; the Farmers’ Choice and X-O, plus cream cheese and bacon, Peabody created a rich and mouthwatering cheesecake with a irresistible breadcrumb crust. Reminiscent of a quiche, Peabody’s cheesecake is perfect for entertaining since it can be made ahead and enjoyed warm or at room temperature. Pair it with a light green salad for lunch or brunch. Or, serve it with crackers for a sophisticated spin on a cheese ball.
