Directions

  1. Preheat broiler.
  2. Heat 1 tablespoon olive oil in medium saucepot and cook chorizo, shallot and garlic 2 minutes.
  3. Stir in tomato paste and cayenne pepper and cook for 2 minutes.
  4. Add chicken broth and tomato and simmer gently 10 minutes.
  5. Stir in parsley.
  6. Ladle soup into ovenproof bowls.
  7. Brush bread with remaining olive oil.
  8. Arrange bread on soup and top with Beemster.
  9. Broil until cheese is melted.
