Directions

  1. Preheat oven to 425F.

  2. Combine tomatoes with thyme, olive oil and season with salt and pepper.

  3. Roast 8 minutes or until softened.

  4. Cool slightly then add ¾ of the shaved Paradiso.

  5. Spoon tomato mixture into phyllo shells and garnish with remaining shaved Paradiso.

  • 2 tsp fresh thyme leaves

  • 1 Tbsp olive oil

  • Salt and pepper
