  1. Preheat the grill to medium-high. Brush the eggplant slices, zucchini slices, and bell pepper halves with pesto. Grill until tender, around 5 min. per side. 
  2. Place ½ cup Beemster on each wrap. Place on grill and cook until Beemster is just melted.
  3. Arrange vegetables evenly over cheese. Fold in ends and roll into wraps.

  • 2 roasted red pepper wraps or whole-grain wraps
