Directions
In a small bowl, whisk together mayonnaise, Greek yogurt, and the juice from 1 lime. Season with salt and pepper.
Brush corn with olive oil and place on a grill or grill pan over medium-high heat. Grill the corn until charred, 10–15 min., rotating occasionally.
Slather mayonnaise mixture over the corn and coat in Beemster XO. Garnish with a sprinkle of chili powder and cilantro. Serve with wedges of remaining lime.
Tip: Corn not in season? Turn this dish into a side with frozen corn, sautéed until slightly charred, then toss with the creamy mayo topping and Beemster XO.
