Inspired by the original Mexican Street Corn, we’ve adapted our recipe with a generous heaping of Beemster XO

Directions

  1. In a small bowl, whisk together mayonnaise, Greek yogurt, and the juice from 1 lime. Season with salt and pepper.

  2. Brush corn with olive oil and place on a grill or grill pan over medium-high heat. Grill the corn until charred, 10–15 min., rotating occasionally.

  3. Slather mayonnaise mixture over the corn and coat in Beemster XO. Garnish with a sprinkle of chili powder and cilantro. Serve with wedges of remaining lime.

     

    Tip: Corn not in season? Turn this dish into a side with frozen corn, sautéed until slightly charred, then toss with the creamy mayo topping and Beemster XO.

  • ½ cup (115g) mayonnaise

  • ½ cup (115g) Greek yogurt

  • 2 limes

  • 4 ears of corn, husks removed

  • 2 tbsp olive oil

  • 1½ cups (150g) finely grated Beemster XO

  • 2 tsp chili powder

  • ¼ cup chopped cilantro
