  1. Preheat oven to 400˚F.  Lightly beat egg with milk in shallow bowl. In another shallow bowl, combine bread crumbs with Beemster XO. Season chicken with salt and pepper if desired. Dip chicken in egg mixture and then voat with crumb mixture.  Arrange chicken on lightly greased baking sheet and bake 15 min. or until golden.
  2. Spoon 2 tbsp bruschetta on each chicken breast and then sprinkle with Beemster. Bake 5 min. or until chicken is done and Beemster is melted.
