Directions

  1. To make the beer cheese sauce, melt butter in a pot over medium heat. Whisk in flour and cook until slightly darker in color, 1–2 min. Add beer and bring to a simmer. Whisk constantly until sauce has thickened and alcohol is cooked out, 4–5 min.

  2. Reduce the heat to low and stir in shredded Beemster Vlaskaas cheese, mustard, and (optional) cayenne. Whisk until all the cheese has melted. Set aside to cool slightly.

  3. Meanwhile, form the ground beef into 4 patties and season with salt and pepper. Add oil to a large skillet over medium-high heat and cook the burgers 4–5 min. per side for medium, or until desired doneness.

  4. Add lettuce to the bottom of the buns and place burger patty on top. Stir the cheese sauce once more and drizzle on top of burger. Garnish with crispy onions and finish with top buns.

    Pairing: Serve with extra bottles of the Belgian-style beer used in the sauce.

  • 1 12 oz (350ml) bottle Belgian-style ale

  • 1 cup (100g) shredded Beemster Vlaskaas

  • 2 tsp Dijon mustard

  • ⅛ tsp cayenne pepper (optional)

  • 1 lb (450g) ground beef

  • 2 tbsp olive oil

  • 1 head Bibb lettuce

  • 4 hamburger buns, toasted

  • ½ cup crispy fried onions
