  1. Remove egg yolks, reserving egg whites. Add yolks to a small bowl and lightly mash. Stir in remaining ingredients.
  2. Spoon or pipe yolk mixture into egg whites. Garnish with additional Beemster, bacon, and green onion, if desired. Refrigerate until ready to serve.


  • 12 large hard-boiled eggs, peeled and halved lengthwise
  • ½ cup mayonnaise
  • ½ cup finely shredded Beemster Smoked
  • ½ cup crumbled cooked bacon
  • 2 tbsp sweet pickle relish
  • 1 tbsp mustard
  • 3 green onions, chopped (optional)
