No oven is required for this pizza. Pre-made pizza dough is cooked in a cast-iron skillet on top of the stove and topped with thinly sliced zucchini, crumbled chicken sausage, and Beemster Slimkaas (Lite).
Directions
Heat oil in a 12-inch cast-iron pan on medium-high heat. Add the zucchini and cook until golden brown, 4–5 min. Transfer to a plate.
To the same skillet, add the sausage and cook 6 min., until brown, breaking up with a wooden spoon. Remove to a bowl, leaving remaining fat.
On a lightly floured surface, roll the pizza dough into a 12-inch circle. Reduce heat to medium and add dough to skillet, making sure dough fills out the bottom of the pan. Cook until bottom turns golden brown 5–6 min., and flip the dough.
Using the back of a spoon, spread ricotta cheese evenly over dough, leaving a ½-inch border. Add shredded Beemster Lite. Top with zucchini slices and crumbled sausage.
Cover the pan with a lid and reduce heat to medium-low. Cook until cheese is melted, 6–8 min. Top with crushed red pepper.
Tip: Make this recipe vegetarian by swapping in sautéed mushrooms for the sausage.
