Preheat the oven to 400°F (200℃). In a large bowl, toss sweet potatoes with 1 tbsp olive oil, fajita seasoning, salt, and pepper. Add sweet potatoes to a foil-lined baking sheet and cook 10 min.
Carefully remove sweet potatoes from oven and push to one side of sheet pan. Add fajita blend and drizzle with remaining 1 tbsp olive oil. Season with salt and pepper. Bake until vegetables are tender, 15 min.
Carefully remove baking sheet from oven and add black beans. Using tongs or a spatula, toss all vegetables to combine. Sprinkle with shredded Beemster Lite and bake until cheese melts, 5 min.
Wrap tortillas in a damp paper towel and microwave 30 sec. until warm. Serve fajitas with tortillas and fixings like salsa, sour cream, and guacamole..
1½–2 lbs (900g) sweet potatoes, peeled and cut into ½-inch cubes

1 15.5oz (439g) can black beans, drained and rinsed
1 12oz(340) pkg fresh fajita blend (peppers and onions)
¾ cup (75g) shredded Beemster Lite
