    1. Preheat oven to 350°F.
    2. Bring a large pot of salted water to a boil over high heat. Add broccoli and cook 4 minutes or until tender-crisp.
    3. Meanwhile, melt 3 tablespoons butter in medium saucepot over medium heat.
    4. Add onion and salt and cook 4 minutes or until almost tender.
    5. Add garlic and cook 30 seconds.
    6. Stir in flour and cook 2 minutes, stirring constantly.
    7. Gradually whisk in milk until smooth. Bring to a boil over medium heat, stirring occasionally.
    8. Reduce heat to medium-low and simmer 2 to 3 minutes or until thickened.
    9. Stir in 1-1/2 cups Beemster until melted and smooth.
    10. Arrange broccoli in 1-1/2 quart baking dish. Pour sauce over broccoli.
    11. Melt remaining 2 tablespoons butter and stir in cracker crumbs. Sprinkle crumbs and remaining Beemster over broccoli.
    12. Bake 30 minutes or until broccoli is tender and crumbs are golden.

    • 1½ cups whole milk
