  • ¼ cup extra virgin olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste
  • 2 cups torn Romaine lettuce
  • 2 cups spring mix
  • 2 peaches, pitted and sliced
  • 2 cups strawberries, halved
  • 4 oz (about 1 cup) Beemster Graskaas, cubed (or Vlaskaas if Graskaas is unavailable)
  • Sprigs of fresh basil for garnish


  1. Whisk olive oil and lemon juice.
  2. Season to taste with salt and pepper.
  3. Arrange greens on salad plates.
  4. Top with fruit and Beemster, drizzle with dressing.
  5. Garnish with fresh basil.
