Directions
Whisk eggs and milk with salt and pepper in a wide shallow bowl. Stir mustard and mayonnaise together in a small bowl.
Spread the mustard-mayo mixture on each of the bread slices. Top 2 bread slices with half of the shredded Beemster Farmers’ Choice. Divide the ham evenly between those 2 slices. Top ham with remaining shredded Beemster Farmers’ Choice. Close the sandwiches with the remaining 2 bread slices mayo-sides down and use toothpicks to hold sandwiches together.
Heat the butter and oil in a 12-inch nonstick skillet over medium-low heat until butter melts, about 3 min. Carefully dip the sandwiches, one at a time, in the egg mixture to coat both sides, and add to the skillet. Cook for 3–4 min., then flip and remove the toothpicks. Continue cooking until the sandwiches are browned and the cheese is melted, about 3–4 min.
To serve, lightly dust the sandwiches with confectioners’ sugar.
