Directions
- In a large skillet, melt butter.
- Add sugar and cinnamon. Stir over medium heat until sugar melts and becomes a thick syrup.
- Add pears and red wine vinegar, stir to coat.
- Add cornstarch and simmer until thickened.
- Spoon pears into prepared tart shells.
- Sprinkle Beemster Classic over tarts while still hot.
- Drizzle with honey.

- 3 pears, diced
- 1 stick butter
- 1/2 cup sugar
- 1 tsp red wine vinegar
- 2 tsp ground cinnamon
- 2 tsp cornstarch
- 30 mini tart shells/pastry cup (either frozen & baked or baked)
- 1/4 lb Beemster Classic Aged, grated
- Honey
