  1. In a small bowl, combine orange juice, vinegar, honey, mustard, and garlic; set aside.
  2. In a large bowl, combine quinoa, Beemster, apple, fennel, walnuts, and sage.  Toss with dressing and serve.


  • 3 tbsp orange juice
  • 3 tbsp cider vinegar
  • 3 tbsp honey
  • 1 tbsp mustard
  • 1 clove garlic, minced
  • 4 cups cooked quinoa
  • 2 cups cubed Beemster Classic (Aged 18 Months)
  • 1½ cups apples, chopped
  • 1½ cups thinly sliced fennel or celery 
  • 1 cup chopped walnuts, toasted
  • 2 tbsp chopped fresh sage
