The most important meal of the day becomes the BEST meal of the day when you add Beemster! Serve these cheesy biscuits with fluffy scrambled eggs or preserves and butter.
Directions
Line a baking tray with parchment paper.
In a bowl, whisk together the flours, baking powder, baking soda, salt, sugar.
Work in the butter with a pastry cutter or your fingers until a crumbly mixture forms.
Fold in 1/2 cup Beemster. Stir in the buttermilk. (Dough may be shaggy.)
Turn the mixture out onto a floured work surface. Pat into a rectangle about 3/4” thick (2 cm). Fold the dough in thirds like a letter (using a bench knife, bring the left side of the dough to the center, then the right side toward the center and on top of the 1st fold). Turn the dough 90° and pat the dough into a rectangle again. Once again, fold the dough in thirds, like a letter.
Pat the dough into a rectangle 1” (2.5 cm) thick. Cover loosely with plastic wrap and refrigerate for 30 minutes. While the dough rests, preheat the oven to 375°F (190°C).
For round biscuits, using a cutter, cut out 8 biscuits. Pat the dough back together and cut out 2 more rounds. Alternatively, for square biscuits, using a knife or bench knife, cut the dough into 9 squares.
Place all biscuits on the baking sheet close together, but not touching (this helps keep their shape and rise). Brush the tops of the biscuits with the egg wash. Sprinkle the remaining Beemster on top of the biscuits.
Bake in 375°F (190°C) oven for 20-25 minutes until cooked through and golden brown.

1 c (170 g) all-purpose flour
1 c (170 g) whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp sugar
120 g cold butter, cubed
1 c (240 ml) buttermilk
3/4 c (85 g) Beemster Classic (aged 18M) grated (large hole), divided
1 egg, beaten (egg wash)
