  1. In a medium bowl, combine mayonnaise, olive oil, lemon juice, Worcestershire, mustard, anchovy paste, and garlic. Mix to combine. Stir in grated Beemster. Season to taste with freshly ground black pepper.
  2. In a large bowl, toss lettuce with desired amount of dressing. Top with croutons and shaved Beemster X-O. Store any remaining dressing in a sealed container in refrigerator.
