- In a medium bowl, combine mayonnaise, olive oil, lemon juice, Worcestershire, mustard, anchovy paste, and garlic. Mix to combine. Stir in grated Beemster. Season to taste with freshly ground black pepper.
- In a large bowl, toss lettuce with desired amount of dressing. Top with croutons and shaved Beemster X-O. Store any remaining dressing in a sealed container in refrigerator.
