Directions

Preheat oven to 350°F.

  1. Heat oil over medium-high in a 10-inch oven-safe skillet. Add the sausage and onion. Cook 8–10 min., breaking up the sausage with a wooden spoon, until sausage is browned and onions are softened. Remove from heat and transfer mixture to a medium bowl. Let cool 10 min.

  2. Using the same skillet, arrange half of potato tots in a single layer. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.

  3. Stir together sausage mixture, 1 cup Vlaskaas and egg mixture. Pour over potato tots in skillet. Arrange remaining potato tots on top in a circular pattern. Sprinkle with reserved 1/2 cup of Beemster.

  4. Bake 60 min., until eggs are set and top is golden. Garnish with the green onions.

  • 1/2 cup milk

  • 1 1/2 cups shredded Beemster Vlaskaas, separated 1 cup and 1/2 cup

  • 2 green onions, thinly sliced on an angle
