Makes: 6 servings
1/3 cup mayonnaise
1/3 cup mango chutney or Dalmatia Fig Spread
3 cups cooked chicken, cut into 1/2-inch pieces
1 cup celery, sliced
1 apple, cored and chopped
1 cup red seedless grapes, halved
6 ounces Beemster Goat Gouda, cut into 1/2-inch pieces
1 head Bibb lettuce
Combine mayonnaise and chutney in a medium bowl.
Add remaining ingredients and toss to coat.
Season to taste with salt and pepper.
Serve in lettuce cups.
