Beemster Classic & Pear Tarts

Cook time: 20 minutes
Makes: 30 mini tarts (depending on size of pastry shell)

3 pears, diced

1 stick butter

1/2 cup sugar

1 tsp red wine vinegar

2 tsp ground cinnamon

2 tsp cornstarch

30 mini tart shells/pastry cup (either frozen & baked or baked)

1/4 lb Beemster Classic Aged, grated



In a large skillet, melt butter.

Add sugar and cinnamon. Stir over medium heat until sugar melts and becomes a thick syrup.

Add pears and red wine vinegar, stir to coat.

Add cornstarch and simmer until thickened.

Spoon pears into prepared tart shells.

Sprinkle Beemster Classic over tarts while still hot.

Drizzle with honey.
