Paradiso Reserve is an Italian-style cheese, made from rich, North Holland cow’s milk, so it’s creamy & sweet. The texture is firm with crystallization throughout and has tangy, savory, zesty notes, similar to parmesan.
Use anywhere you'd reach for parm - melt atop baked pasta or chicken parm. Layer onto cold subs with ham, salami & turkey. Grate over spinach sauteed with garlic.
Go for Chianti and Primitivo, or experiment with an unknown Italian white wine. Pale ales will highlight the cheese's complexity.
